Mikes Cider Recipes

Lately I have been looking around  for recipes that incorporate the use of cider. Over time I hope to try these recipes and share some of them with you… So, what I have done is take a couple of cider cake recipes that I found, discovered I didn’t quite have all the ingredients required, supped a couple of ciders and improvised….

 

 

Scrumpys Cider Cake

1 large apple peeled and chopped (mine came from Bobs garden, but yours could come from anyones garden)

Handful of dried fruit such as sultanas  (I used a packet of mixed fruit from a cake mix we never use)

1\2 pint cider  (I used Woods cider with this one as it contains no sulphates and of course, the other half of the bottle   goes down very well while you are soaking the apple and fruit with the first half)

  • 4oz brown sugar
  • 4oz butter
  • 8oz wholemeal or plain flour
  • tsp All spice
  • 1\4 tsp cinnamon
  • tbsp demerara sugar
  • tsp baking powder
  • 2 eggs beaten  (room temperature)

Method……………….

  • preheat oven to gas mark 4  or 180C
  • line a 20cm/8″ cake tin
  • soak chopped apple and dried fruit in the cider
  • cream butter and light brown sugar {at this point I discovered how much fun a food mixer can be}
  • gradually add the beaten egg little by little
  • sift all the dry ingredients and fold into the mixture until well incorporated
  • finally, add the cider and fruit……
  • spoon the mixture into the prepared cake tin, sprinkle over the demerara sugar and bake for 45 to 60 minutes.
